Zucchini banana chocolate chip muffins.
I couldn't decide which to do - so why should I?
I just threw 'em all together instead!
You will need:
3 cups finely grated fresh zucchini
2 ripe bananas
2/3 cup + 2 tablespoons unsalted butter
1 1/3 cup sugar
2 eggs, beaten
2 teaspoons vanilla
2 teaspoons baking soda
1/2 teaspoon salt
3 cups all-purpose flour
2 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup chocolate chips
Preheat oven to 350 degrees. In a large bowl combine sugar, eggs and vanilla until beaten. Stir in the grated zucchini and bananas. Add the butter, softened, and mix. In a separate bowl, mix the dry ingredients (baking soda, salt, flour, cinnamon, nutmeg) together. Combine with zucchini mix. Stir in chocolate chips and wham-bam you're ready to scoop! Add to sprayed muffin pan and bake for 18-20 minutes until golden brown.
