I (Kylie, triplet #1) am usually not the chef around here, but today I decided to step in
and share what I made as a Christmas treat for loved ones this year.
Tummy, meet mini gingerbreads.
Gingerbreads, meet tummy.
To start you off, preheat oven to 350 degrees. You will need the following ingredients:
Gingerbread
. 2 cups of flour
. 1 1/2 teaspoons ground cinnamon
. 1 1/2 teaspoons ground ginger
. 1 teaspoon baking soda
. 1/2 teaspoon salt
. 1/2 cup unsalted butter
. 1 cup molasses
. 3/4 cup dark brown sugar
. 2 teaspoons grated fresh peeled gingerroot
. 3/4 cup milk
. 2 large eggs
Icing
. 1 1/4 cup powdered sugar
. 2 tablespoons fresh lemon juice
. 1/2 teaspoon grated lemon zest
. 2 tablespoons finely chopped crystallized ginger
If you're like me and reading fancy words like crystallized ginger, fear not!
I found these babies at WINCO (which unfortunately is only located on most of the West coast) but you can find them anywhere, I'm sure of it. They look kinda like candy.
In a medium bowl, mix flour, cinnamon, ground ginger, baking soda, and salt.
In a 3-quart saucepan, melt butter over medium heat. Add molasses, brown sugar and gingerroot.
Cook 1 minute, stirring constantly.
Eggs being eggs. You'll need these. Remove mixture from heat and whisk in milk and eggs. Continue on to mix in flour mixture with heated mixture until batter is smooth.
Pour batter into prepared foil mini loaf pans with baking spray.
Fill each pan about 2/3 full and divide evenly.
Bake 25 to 30 minutes. Easy peesy!
While your buns are bakin' in the oven, go ahead and start on the icing.
Grate your lemon, but try to avoid grating so much that you see white.
That will make your icing more bitter - so be gentle.
It's tempting, I know.
In a small bowl, whisk powdered sugar, lemon juice (squeeze from grated lemon!), and lemon zest until smooth. Glaze that baby over the top of the bread and sprinkle some crystallized ginger. In my opinion, less is more of the ginger. It's a strong one!
VOILA!

We wrapped them up for presentation and sent them off to friends.
I spent about 30 minutes cutting up recycled grocery bags and tying jute around it.
The stamping reminded me of the 80s. Good times in the kitchen.

ReplyDeleteI'm going to have to go find some crystallized ginger and buy some ginger root because this recipe says winter & Christmas all over it! I love gingerbread!

ReplyDeleteI bought my crystallized ginger at Yoke's grocery stores in Wa. They had it in more than one place on the shelves....in the oriental cooking section and baking section. I used it to make some jam. Looks lkie you had fun doing your holiday baking:) I like your packaging!
