There's something about fall that makes me want to be in the kitchen before I am dying of hunger. All the pumpkin and chocolate recipes are calling my name! Welcome fall with something delicious...

Pumpkin Cinnamon Streusel Pancakes


For the cinnamon streusel:
1/2 cup all-purpose flour
1/2 cup brown sugar, packed
1 teaspoon ground cinnamon
6 tablespoons cold unsalted butter, cut into chunks

To make the pancakes:
3/4 cup all-purpose flour
1/2 cup whole wheat flour
2 tablespoons light brown sugar
2 teaspoons baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ground ginger
1/8 teaspoon ground cloves 
1 cup milk
1/2 cup canned pumpkin
1 large egg
2 tablespoons canola oil
1 teaspoon vanilla extract
I added chocolate chips, hehe

Directions:
1. Make the streusel and mix with a fork. Set aside.
2. Whisk dry ingredients. Set aside.
3. Whisk wet ingredients and add to dry ingredients. 
4. Heat griddle or pan to medium. Drop 1/3 cup of batter and add 2 tablespoons of streusel. Let cook for 2-3 minutes. Flip pancake and add more cinnamon streusel! Cook until golden brown.
5. Serve pancakes warm with maple syrup and a cold glass of milk- you'll need it! 

It's not too late for breakfast is it?
