Pineapple Salsa

Country of Origin: Tropical; common in Maui, HI 

For those of you who follow my blog, sorry about the repeat recipes sometimes. This was just too good to not share on here too. Also, I haven't taken pictures of anything else I have made lately, so this is what you get for today! It is delicious and my husband loved to eat it plain. We didn't have any tortilla chips, otherwise I would have definitely tried that. So I decided to serve this with ono fish topped on some quinoa for dinner. It was refreshing and full of flavor, and a nice change from the usual dinners I make. Not to mention, if you don't have pineapple, substitute with mango. Who knew fruit could be eaten this way. Fun!


Ingredients

1/2 small pineapple
1/2 cup cilantro, chopped
1/4 onion, chopped (i used white but red would be better)
1 green onion, chopped
Zest and juice of half a large lime
Dash of salt and pepper to taste
Dash of mrs. dash fiesta lime seasoning blend to taste

*If you have a small jalepeno, throw that in! i would have if i had one, but it was delicious still without

Directions

Cut off both ends of the pineapple and the skin
Once skinned, chop in half
Chop into cubes
Put in a large glass bowl
Chop cilantro, onion, green onion and place in bowl with pineapple
Add lime juice and zest
Sprinkle with seasonings, mix well with tongs or spoon
Let sit for at least one hour in the fridge so flavors combine
Serve with chips or as part of your main dish!
