Dark Chocolate Chip Cake with Chocolate Cream Cheese Frosting

Friday was my husband's birthday and he requested a dark chocolate chip cake with chocolate frosting. I did a little researching and found this awesome recipe that was a total hit so i couldn't resist sharing. It tasted so good and the frosting was so tasty. The cake had the perfect amount of sweetness and perfect texture. It wasn't dry, crumbly, or too rich. This recipe is seriously a hit and pretty sure everyone at the party enjoyed this cake and came for seconds. So I hope you find a good excuse to bake this yummy thing!


cake ingredients

3 eggs
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1 teaspoon baking soda
3/4 teaspoon baking powder
1/2 teaspoon salt
3/4 cup butter, softened
2 cups sugar
2 teaspoons vanilla
1 1/2 cups milk
3 oz. dark chocolate, grated
 (i used a cheese grater and broke off little chunks, yum!)

cake directions

allow eggs to stand at room temperature for 30 minutes
preheat oven to 350 degrees
grease three 8x1 1/2 inch round cake pans and line with parchment paper
grease parchment paper and lightly flour pans, set aside
in medium bowl stir together flour, cocoa powder, baking soda, baking powder, salt; set aside
in large mixing bowl beat butter on medium to high for 30 seconds
gradually add sugar, 1.4 cup at a time, beating on medium until well combined
scrape sides of bowl and beat for 2 more minutes
add eggs one at a time, beating after each addition
beat in vanilla
alternate between adding the flour and milk to the butter mixture, beating on low after each addition
once combined beat on medium for 20 seconds more
stir in grated chocolate (i used a cheese grater)
divide batter among three pans
bake 30-35 minutes or until toothpick comes out clean (i did 30)
cool cakes in pans on wire racks for 10 minutes, then remove layers from pans carefully
allow cakes to cool thoroughly on rack before frosting
frost, store, covered in refrigerator

frosting ingredients

1/2 cup butter, softened
2, 3 oz. package cream cheese, softened
5 oz. unsweetened chocolate, melted and cooled
2 teaspoons vanilla
6 1/2 cups powdered sugar
1/4 cup milk

frosting directions

in a large mixing bowl beat butter and cream cheese
add unsweetened chocolate and vanilla
beat until blended
gradually beat in 3 cups of powdered sugar and milk
beat in remaining powdered sugar till its spreading consistency
frost your cake using rubber spatula
